Zucchini Carpaccio

zucchini carpaccio

Imagine sitting at an outdoor cafe, in the jungle, alongside a river. It’s about 100º, and the humidity is oppressive. It’s a gamble to guess whether you or your water glass is dripping with more beads of sweat. Searching the menu for something refreshing, you land on Zucchini Carpaccio. It’s got sun-dried tomato, parmesan, chive, lemon zest and arugula. Perfect. Continue Reading →

Happy Hour with Tom Brady :: Creamy Hummus

creamy hummus

Ok, that title is a little misleading – but it made you curious, right? I’ll get to Tom Brady in a second. So, experts say that during these strange times it’s important to have a “routine.” Husband and I say “Cheers” to that! Besides staying on a schedule, exercising and getting dressed and ready for work (who knows when a Zoom meeting will pop up?!), we have a pre-dinner “happy hour” to catch up on the day, and the day’s news. I’m trying to keep things healthy, so the centerpiece of our little ritual is this Lemon & Cumin Creamy Hummus. Continue Reading →

Open Faced Tomato Burrata Sandwiches

Summer means fresh produce, soaking up the great outdoors and casual entertaining. For us, hanging out with dear friends at The Rockin’ K Ranch in Northern Idaho is about as close to heaven as you can get. When my friend Mim brought these Open-Faced Heirloom Tomato Burrata Sandwiches to a recent get-together at the barn, I knew I had to share. Continue Reading →

Spring Roll Chicken Salad

If you’re looking for a healthy option in an Asian restaurant, fresh spring rolls are usually a good choice. Some restaurants call them “summer rolls” to distinguish them from the more popular version that is wrapped in won ton skins and fried. (Not so healthy!) I’m talking about the ones that are wrapped in rice paper and stuffed with crunchy veggies, maybe some shrimp or chicken, and served cold with a yummy dipping sauce. They’re fun to make, but let’s face it… the hangry-er I am, the lazier I am! Enter Spring Roll Chicken Salad.

Jalapeño Hummus

I signed up for a 30-day “Bod Pod” challenge in a weak moment. (It’s a workout program that targets, um, body fat.) I’m about halfway through the month and finally getting the hang of the food part. Because it’s based on strength training, we’re encouraged to eat protein. Lots of it. (I’m running out of things to do with chicken.) Continue Reading →

Sausage Stuffed Mushrooms

These little morsels will have you struggling to find the right balance between polite moderation and downright gluttony. At least that’s been my experience… Continue Reading →

Chicken Satay with Peanut Apricot Sauce

I learned a lot making this recipe for Chicken Satay with Peanut Apricot Sauce.

First, dry skewers tend to burst into flames. Thankfully I’d soaked mine – though not nearly long enough. The ones that survived are pictured here. Continue Reading →

Mango Ahi Tuna Poke Avocado Bowls

If you’re blessed enough to have one great friend in life, you are blessed indeed. For some unfathomable reason, I hit the mother-lode.

Every one of the women that I hold dear plays an invaluable, yet different, role in this precious circle… And for the past two months, I’ve been blessed to be making camp in northern Idaho with two of them. Continue Reading →

Jalapeño Watermelon Bites :: Birthday at the Barn

Every year, we spend more and more time in northern Idaho, in a spot about 20 miles south of Coeur d’Alene. And most years, that trip coincides with my best friend’s birthday. Continue Reading →

Crispy Chickpeas

crispy chickpeas

I will drive all the way across town to find fresh homemade pasta, an unusual spice or a special cut of meat. But if I have to find something to wear for an event, or a new pair of shoes, I cringe. I appreciate malls in theory, but in reality, am overwhelmed and intimidated.  Continue Reading →
