Minnesota is known for a lot of things. Long cold winters… more than 10,000 lakes… and Hockey Hair. Prince, Bob Dylan and Betty Crocker (not a real person) are all Minnesotans. Zubaz were invented here (sorry). We’ve got the Mall of America, a 49-foot tall statue of Paul Bunyan, and The Mayo Clinic. Folks from the North Star State famously insist on using the wrong name for a popular children’s game (they call it “Duck, duck, gray duck”. What?! EVERYBODY knows it’s “Duck, duck goose!”). If you’ve enjoyed Cheerios, Tator-Tot Hot Dish (again, sorry) or Bundt cake you can thank Minnesota. Continue Reading →

Skinny Buddha Bowl {and Cookbook Giveaway!}
On summer evenings there’s a window of time between when our deck is finally covered in shade, and before the mosquitos come out, that is perfect for dinner al fresco. And if I’ve done just a little prep early in the day, I can spend my time enjoying a nice glass of Sauvignon Blanc outside instead of standing over the stove.
This Skinny Buddha Bowl, inspired by my friend Robin Asbell, is a perfect meal for those nights. Continue Reading →
Basil, Cucumber & Avocado Gazpacho
It’s hard to top a day that includes hiking in the mountains, then enjoying a meal and a little wine outside while staring at said mountains. If that meal includes a new food discovery – like this Basil, Cucumber & Avocado Gazpacho, all the better. Continue Reading →
Tropical Avocado Brownies {Don’t invite me to your costume party.}
We all have our quirks. But my list might be longer than the average person’s…
I don’t drink beverages that fizz, “echo songs” drive me nuts, and I’ve never been one for costume parties. In fact, I’d compromise on either of the first two just so I didn’t have to go to the last one. I’ll either make up a “previous commitment” (as in, I previously committed – to myself – that I would stay home and catch up on “House of Cards”) or I’ll be the one that shows up sans costume, as if I’m on my way to or from somewhere else.
Chicken, Avocado & Mango Salad
Husband and I have started naming our different bike routes. Last weekend, our 15 mile ride took us along the Mississippi River and through downtown St. Paul. The last leg involved a 3/4 mile trek over the Mendota Bridge. Not a big deal, unless you’re afraid of heights and 4 lanes of traffic whizzing by at 65 miles an hour. Oops. Continue Reading →
The Best Guacamole on the Planet
There’s been some competition between my neighbors over the years. It involves guacamole, and whose is best. We’re told it’s a tie between mine and my friend Doug’s. Well that makes sense — he and I use the same recipe!
